Gin Fizz

Gin, lemon, sugar, and soda topped with a frothy egg white foam. Lighter than the Tom Collins and more elegant at the bar.

Ingredients

  • ·2 oz gin
  • ·1 oz fresh lemon juice
  • ·3/4 oz simple syrup
  • ·1 egg white
  • ·Club soda to top

Method

Dry shake gin, lemon, syrup, and egg white for 15 seconds. Add ice and shake again hard. Strain into a highball glass with no ice. Top slowly with cold club soda.

Pour slowly. Sip slower.
